One of the best things about the fall in NJ, beside the leaves changing color, is the abundance of apples ready to be picked. The warmth of a baked apple on a cool fall day is a treat not to be missed! Use your favorite granola in this recipe – we use Goodness Grainless Cinnamon-Vanilla – or chop some nuts or dried fruit if you prefer.
4 Dates, chopped
1 ½ cups Granola
1 ½ cups Almond Milk
1 cup Coconut Milk
Freshly Ground Nutmeg on top
Preheat oven to 350.
Wash and core apples.
Place apples into an oven safe baking dish.
Combine the chopped dates and granola and stuff the middle of apples with mixture. Scatter any remaining mixture around the bottom of the baking dish.
Pour milks on top and bake for 20-25 minutes. Apples should be soft but not mushy. Sprinkle freshly ground nutmeg on top and ENJOY!
