Superbowl Eats – Squirrel & The Bee Edition

If you don’t plan on watching the game this weekend with some comfort food in hand – you’re doing it wrong! But Super Bowl Sunday spreads can derail even the best efforts and resolutions. The amount of food along with the kinds of food, leave many of us feeling like we are the stuffed pigskin.

We’re here to offer some tips and strategies to help you enjoy this get together without the stress and guilt!

Vegetables – Make sure to have a large spread of vegetables for snacking and dipping. Subbing carrots and peppers for chips and pretzels can allow you to enjoy dips without the empty calories.

Appetizers – have you ever considered Bufffalo Cauliflower in place of Buffalo Wings? Or lettuce wraps in place of pigs in a blanket? Try grilling some chicken breasts early in the day and slice it into thin strips that can be topped with sauerkraut and mustard and wrapped in lettuce for delicious – and healthy – appetizers.

What do I serve at my Super Bowl party? In addition to the Nachos (below) and veggie dips, we offer a fun and healthy option for dinner to replace greasy and unhealthy pizza. Each year we set up a Panini bar in the kitchen, and invite all of our friends at half-time to create their own Panini from a variety of meats and cheeses, krauts, pickles and all of the fixins’ you can imagine. Everyone loves it and it is less work for me! All I have to do is set it up – no cooking or prep on my part. Don’t forget plenty of pickles and Honest Jacksons Sweet Potato Chips!

Keep desserts simple, like berries and chocolate dipped fruits, and remember you don’t want to punish yourself for the next two weeks if you over do it!

Nachos that will satisfy your cheesy cravings with a healthy twist!



  • 1 bag Gluten Free Blue Corn Chips
  • ½ red bell pepper
  • Handful cherry tomatoes
  • ½ onion
  • 1 small or ½ large zucchini
  • 1 tbsp extra virgin olive oil
  • ½ cup manchego cheese, shredded
  • Salsa (sugar-free)
  • Guacamole


  1. First, preheat your oven to 350F. While the oven is warming up, dice up the pepper, onion, zucchini, and cut the cherry tomatoes in half.
  2. In a sauté pan, heat up the olive oil and add in the veggies. Saute your veggies until they are soft and golden brown. Then, take your pan off the heat.
  3. In a large bowl or platter that can go in the oven, pour in a bag of blue chips. Put the veggies on top of the chips then sprinkle on your manchego cheese. Pop it in the oven for 5 minutes.
  4. When the cheese is nice and melty, take your nachos out of the oven and add toppings of choice. My favorites: salsa and guacamole. Dig in!
